Here is another fact about yours truly - I am not a fan of banana cakes or banana bread..."So why did you bake this cake in the first place?" Maybe, I am really weird *wink* No, seriously, reason behind is because 'B' loves banana cake and my friends are begging me to make one. When it comes to them, I am weak. But only when they beg. Ahaha! Just kidding! I just love them so.
This recipe is so simple and I must admit, I like the outcome. It's dense, moist and creamy. Best served with a scoop of vanilla ice cream (though I don't have one when I made this).
BANANA-CINNAMON CAKE
Print this Recipe
Ingredients:
1 and 1/4 cup cake flour
1 and 1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon powder
1/4 cup softened butter
1/2 cup brown sugar
1 egg
1/3 cup mashed ripe (or overripe) bananas
1/2 cup whole milk
Method:
Preheat oven to 150C.
In a mixing bowl, cream together sugar and butter. Mix well.
Add egg, and mix until well blended. Add in mashed bananas and milk. Mix well. Set aside.
In a separate mixing bowl, combine all remaining dry ingredients.
Gently combine the dry ingredients to the wet mixture. Mix well.
Pour mixture in a greased 9" pan and bake for 35 to 40 minutes.
Let cool, slice and serve.

Hi Dudut! No you're not weird at at all I assure you! My kids are the same so am I ! LOL This banana & cinnamon cake looks delicious just as you described it!
