Salted Fish Fried Rice - A Kulinarya Cooking Club Entry

KCC challenge is back with a bang! I am excited because of two reasons - one, this will be my second entry and two, because the September challenge was indeed a challenge!


This month's hosts are Oggi of I Can Do That, Day of Chef By Day, Boyet of Reel and Grill and Ray of Wok with Ray.   These amazing people came up with a real challenge with the theme RED, WHITE, YELLOW and BLUE - the colors of the Philippine flag.  Tracing our Philippine history, two major events are being celebrated within the month of August which is National Heroes Day and Ninoy Aquino's death so goes the patriotic theme for this month.  Cool, huh?

Sounds easy right? But here is the catch, we cannot use artificial food coloring.  Okay, where in the world will I get a blue colored food or ingredient? Plus of course, the dish must be Filipino inspired.  It was stated in the rules though  that we can use one non-food element to represent a color, say a blue plate. But I (initially) don't want to use a blue plate, just pushing myself, you know. Believe it or not, I even had dreams about this challenge.  That is how serious I am about this *wink*

"The use of flowers will answer this dilemma of mine." - that was me talking to myself.  I even discussed this with friends and told them that I am thinking of making a salad with rose petals, blue rose to be exact.  The next day, I called Holland Tulips to order blue rose but then I discovered that those pretty blue roses are just dyed - I thought since they came from Holland, they are authentic.  Now I know they are not.

So I was doomed!  I surrendered and bought a blue plate but still unsure on what to do.

The day I decided to cook and eat this dish was when I got my answer.  I called this a discovery by accident - for this entry that is.  Salted Fish Fried Rice with Tomato and Salted Egg saved the day!  And it was only after I plated it that I realized that it met all the requirements (or rules) of this month's challenge.  Now I have an entry!

Salted Fish Fried Rice


Ingredients
1 clove of garlic, crushed
1 medium red onion, chopped
3 pcs salted fish, shredded, about 1/4 cup (if you have bottled tuyo, go ahead and use them)
2 cups cold cooked rice
1/2 oil

for garnish
tomato, wedged
salted egg, wedged
parsley

Method
In a wok, heat oil and saute garlic until brown.  Add onion until transparent.  Add salted fish.  Fry for about a minute.

Add cooked rice and toss for 5 minutes.  This, I believe is the secret of good fried rice, the continuous tossing.

Additional salt may be added if you wish, I did.

Transfer in a plate and garnish.


This month's challenge actually made me realize one thing, in times of chaos, go with the basics and just be simple. *wink*

  1. when i was in college my roommate and i used to have that for breakfast (minus the garnish and it wasn't as lovingly plated, lol)! brings back such wonderful memories... :)

  5. we do this too since my sis likes it. but just salted fish on garlic fried rice. no tomatoes and salted egg since she doesn't eat that. sometimes, we include sunny side up :D

  7. The simple and the basic is sometimes the best solution. I really love this rice. There is a similar Malaysian dish like this that use a lot of fresh herbs and I really love it. Good job, Dudut.
