Longganisa (Sausage) and Basil Pasta


Longganisa is one food very popular in the Philippines.  It comes in different shapes and sizes and flavors too.  I guess there are as many variety of longganisa in the Philippines as there are our islands. *wink* Some of the most popular variants are Vigan, Lucban, Cebu and Alaminos longganisa.  And according to Ivan Henares of Ivan About Town, a variant of longganisa may fall either of the 2 major categories - hamonado (sweet) or derecado (garlicky).  Internationally, longganisa is called sausage or chorizo.

There's your longganisa 101.  And since this food is available everywhere and because I like them for breakfast, I always stock some.  Last week, I feel like recreating the way I eat this Filipino sausage so I decided to make a pasta out of it. Good thing I will be going to a gathering, I brought some for my friends to taste and give me their verdict.

Longganisa (Sausage) and Basil Pasta

Ingredients
100gms angel hair pasta, cooked as per package instructions (reserve some pasta water, you might need this later)
1 small white onion, sliced thinly
1 medium ripe tomato, seeded and cubed
3 gloves garlic, roughly chopped
1/2 a cup longganisa (I used hamonado), cut in tiny cubes
1/4 cup extra virgin olive oil
5 leaves of fresh basil, chopped
1/2 tsp crushed chili
salt and pepper
parmesan cheese

Procedure
In a sauteing pan, fry longganisa until brown.  No need to add oil for longganisa will produce some.  Once brown, add olive oil and onion. Saute until onion is almost transparent.

Add garlic.  Careful not to brown then add tomatoes and saute for 2 minutes. Add a pinch of salt and a dash of pepper.

Bring in crushed chili and saute for 30 seconds over medium heat.

Add in the cooked pasta and toss until ingredients are incorporated in the pasta.  If pasta is dry, add in some pasta water.  One tablespoon at a time. Turn off heat.

Serve with parmesan cheese.

    1. oh, i forgot to include that...basil comes together with pasta when you toss it with the sauteed sausage.
