One Minute Cinnamon Peanut Butter Cake

I am more of a spontaneous cook than a baker, I should say.  For the longest time now, I fear baking.  Not the baked goodies but the process.  Probably because baking for me is a precise and very calculated method, to which I'm not fond of doing (until I started blogging).  But when I started to see (and feel) fellow bloggers passionately write about muffins, cakes etc. and feast my eyes with their mouthwatering pictures, I considered taking another look at baking and challenge myself.

Yesterday, I came across this recipe from Back to Her Roots called One Minute Peanut Butter Cake.  I scan the article and my thought balloon was, " I think I can do this. It's not complicated and if I fail, I won't be wasting too much ingredients."

So instead of making lunch, I tried this recipe though I experimented on using Cinnamon Peanut Butter instead of the plain one indicated in the original recipe.

One Minute Peanut Butter Cake


1 egg, beaten
1 tablespoon brown sugar
1/2 teaspoon baking powder
1 heaping tablespoon flour
2 tablespoons cinnamon peanut butter by PB&Co.
1 teaspoon milk
1 tablespoon powdered sugar

Afraid of committing a mistake, I followed each step from the recipe.  I was even wondering if I should discard the oil from the peanut butter for it was not stated in the recipe (that's how fearful I was). But what the heck, it will just be me who will eat this, if ever.

In a small bowl, I whisked together egg, brown sugar, baking powder, peanut butter and flour.

Good thing I have a ramekin, I poured the batter into it and set the power of my microwave to its highest (I assumed this is the right thing to do) and microwaved it for 30 seconds.

While the cake is microwaving (following the recipe) I stirred in milk and powdered sugar together.  I didn't add any more sugar for I got the consistency I wanted.  This will be used for the frosting.

I went back to the microwave and whala! I have baked a cake!

I removed it from the ramekin and pour the frosting.


Wow! My first non-boxed cake creation, made from scratch.  The taste? It tasted like...a cinnamon cake!
