Sizzling Beef Stir-Fry

"What to cook for dinner?" 

This question, I could say is my favorite line everyday.  Even if I always cook, my dilemma is what to cook.  My mom used to say that preparing a menu is one of the challenging things she does everyday.  I didn't actually understand what she meant until it is my turn to think and prepare for a meal.  It's was not easy indeed.

"I want to eat veggies this time" - that is me talking to myself.  5:00PM and there I was searching the fridge on what to cook.  I have meats but I do not have any veggies!  "Now I have to go to the market!"  Do you know how far the local market is from where I am living? Less than 250 meters (approx)  plus three condo floors (I live on the third level).  Not very far yes, but I have this thing about staying 'home' when I am home.  Oh, well, that's the lazy side of me. If I want vegetables, then I have to go to the market.  But what to do? What to cook?  

I then re-visited my recipe books (which I have not seen for a while now) and decided to make the Sizzling Beef from Essential Cooking Series - Stir Fry.  Don't be fooled, it has more vegetables than beef, it's just the name.  I'm actually crossing my fingers that I will find some broccoli and bean sprouts in the local neighborhood market - in Filipino dialect, this place is called talipapa.

I gave in to the fact that I am going to the market, it was not a waste for I was able to buy the ingredients I needed and so I begun to prepare this easy and quick meal.  

Sizzling Beef 
adapted from Essential Cooking Series - Stir Fry

 
250 gms beef strips
1 Tbsp soy sauce
1 Tbsp rice wine or sherry (I used rice wine)
1 Tbsp cornflour (I do not have this so I used cassava flour instead)
1 1/2 Tbsp peanut oil (again I do not have this - I used sesame oil)
150 gms broccoli, cut into bite size pieces
2 Tbsp water
1 large red capsicum (bell pepper), cut into strips
1 clove garlic, crushed
1/ 1/2 Tbsp oyster sauce
100gms bean sprouts
salt and pepper

In a bowl, combine beef strips, soy sauce, rice wine and flour. Mix and set aside.

Since this is stir fry and it you are required to do this in high heat and fast, I suggest you prepare all the ingredients first and have them handy before you turn on that stove.  I don't usually do this, but when I cook stir fry, I deviate from the practice of cutting and chopping while something is heating on the stove.

 
Salt and pepper is just within my reach don't worry :)

Heat wok and half of the oil. Once smoking hot, put in beef strips and stir fry for 1 minute.   Do not over cook so beef won't get rubbery and tough.  Remove from wok and set aside.

In the same wok, add remaining oil. Wait for it to smoke a bit then add garlic.  Stir for 30 seconds then add bell pepper. Stir fry for 2 minutes.  

Add oyster sauce, water, salt and pepper.

Bring in broccoli and stir fry for 2 to 3 minutes.

 
Once broccoli turned bright green, put in the bean sprouts and stir fry for 2 minutes.

Add in the previously stir fried beef and mix for about a minute or until beef is reheated.


Done!


I actually miscalculated how fast I can do this so it resulted to me cooking dinner really early. Bokk is not due to arrive for another hour.  *sigh*

She still did enjoy the meal eventhough it's not on its best anymore.

I did some revisions on the original method of cooking indicated in the recipe book to suit my own preference of preparing the dish.
