I really fell inlove with Chef Tanke's Nilasing na Saging when I tasted it at 1521 so I told myself that I will make one. Though I know I don't know the exact ingredients she used to make it, I may as well try whatever it is that I have tasted from the dish.

Yesterday when I was at the local market, I saw a beautiful and ripe saba (plantain) and decided to make that delectable dessert.  Also, I got to use that jackfruit I bought last weekend before it spoils.

With a little imagination and experiment, I created a Filipino dessert. Something new to divulge in. This recipe does not need any rum or flambeing of sort, but still delicious. Hope you like it.

SWEETENED PLANTAIN (SABA) with JACKFRUIT


Ingredients
18 to 20 pcs plantain or saba, cut in bite size pieces
6 Tbsp brown sugar
1 liter water
1 pandan leaf
3 pcs jackfruit, stripped
1 Tbsp salted butter

Procedure
Bring to boil plantains (saba) and water. Simmer for 10 minutes.

Add in pandan leaf and jackfruit.  Simmer for another 5 minutes.

Add sugar and butter.  Simmer for 15 minutes or until liquid is reduced to half.

Serve warm.

  1. interesting...you added butter. and the pandan leaf would give it an added 'twist' to the taste!
