Blueberry Yogurt Pancake : Nelly's Big Day!

And Nelly said YES!

I came to know Nelly (@Nella22) via Elizabeth (@Mango_Queen).  From the day that we were introduced, I came to love this lady.  She is very kind and very supportive.  I know I have found a friend in her, virtually if I may say.  This post is my way of saying thank you Nelly for your friendship and I enjoined the rest of your foodie friends to express our heartfelt congratulations to you and Brian! 

For this virtual party, I have prepared something simple and easy yet comforting dish especially in the morning and even if I am not married, I know this breakfast treat is a sure way to brighten up any couple's day! 

BLUEBERRY YOGURT PANCAKE
Adapted from The Pancake Handbook


 1 135gm Pancake Mix
1 medium egg
1/4 plain cup yogurt 
1/4 cup water
1/2 cup Blueberry reserve/jam
butter

Method
In a bowl, whisk egg.  Add yogurt, 2 Tbsp blueberry and water.  Mix until well blended.

Add pancake mix and blend well. 

Meanwhile, heat remaining blueberry jam inside a microwave for about 30 seconds or over very low heat until warm. Set aside. 


Heat a non-stick pan.  Scoop pancake batter and grill over medium heat until bublles appear.  Turn pancake and cook for another minute.  

Do this with the remaining batter.  Top with butter and pour warm blueberry jam.

Recipe Notes: Some ingredients won’t always be fresh or available. Or the heat may flare up and the anger spills over. Simmer down and douse the flames with all the LOVE you can throw in.
