Frozen Fruitcake Salad - Welcome 2012!

Together with the rest of foodie world who are participating in this virtual party of welcoming 2012 with a bang, let's take a look at the recipes here at MTR which made it to my Top 10 for 2011.

I chose My Top 10 based on the following:
  • most number of comments,
  • most number of hits or
  • most memorable recipe (for me)
You ready? 

10.  Red Adobo

and the number one is.... (drum roll)

The simplest recipe made it to the top 1- it got the most number of hits and second to the most number of comments, plus I really had an amazing experience before and after making that recipe and post *wink*

And to welcome the new year, here is my share to the Welcome 2012 virtual party:

recipe inspired by Del Monte

1 can (826ml) fruit cocktail
250 mL all purpose cream
150 mL condense milk
90gms grated cheddar cheese
1 can cream style corn
store bought plain chiffon cake or sponge cake

In a large bowl, combine all ingredients except cake. 

Line container/s with slices of cake about 1/2 inch thick.

Pour fruit mixture until covered.  Gently press down using a spoon for cake to absorb liquid more. Be generous with the liquid, cake has to adsorb liquid mixture for best results.

Line again with cake slices then fruit mixture.

Cover container and freeze overnight.

Makes 3 small trays.

Blogger's note/s:
You may use any kind of container depending on your preference.  I have used 6.5"x2"x2" aluminum tray. Just make sure it has cover for easy storing.

  13. I'm concerned to try this, although I think I'll skip the dates and figs. Maybe I can find something else to throw into the mix. Where do you find dried pears? And cherries? I've seen dried apricots, but not the others. I might mess around with that dressing a bit, too. I looked up fries and see that it's chicory. I wonder if I can find it here. I've seen it in some of those pre-packaged salad bags. fruit salad recipe.

  14. Hi everyone! I have two brands of condensed milk, one is Alaska and the other one is Carnation. I have no idea on which of these two is the best brand to use for the fruitcake salad recipe. I ordered them both at (, last week for our upcoming Halloween party. I would definitely try this recipe, but can you help me out?

    1. Hi Ashley,

      I am not a fan of both brands (sorry) I use either Milkmaid or Liberty. But if I have to choose between Alaska and Carnation, I'd use Carnation.
